Fajitas!

Stokeberry was selling fajita meat at the farmers market on Sunday, so I took the opportunity to make some fajitas. Alex marinated the beef in lime juice, cayenne, paprika, and cumin while I followed Sarah's tortilla recipe. My tortillas were nothing compared to the magic of Sarah, but they were tasty none-the-less. I roughly doubled the amount of water just to get the dough to stay together and I was having issues getting them thin enough without having them fall apart. So they were a thick, crusty, flat, corn base for all the fajita toppings. I sauteed a bunch of onions, garlic, peppers, carrots, tomatoes, and seasoned it with paprika, cumin, cinnamon and salt. Lastly I grated some Golden Glen Creamery jalepeno cheddar and opened a container of Nancy's sour cream, and voila - fajitas!

  1. Mmm...I miss Monika cooking! Though my gluten-free, vegan creations are getting me a reputation as a baker at my school. Can you believe it? I did make an incredible GL, vegan chocolate cake with maple icing last week. Huge hit. Who knew I had this in me?
    BTW, living somewhere without a year-round farmers market is pooey. I'm about to have some discussions with local farmers to see what the dealio is. The farms are literally a 5 minute bike ride but near as I can tell nothing grows in Colorado in the winter. And my local market likes to label things as either from the "USA" or "Mexico." The USA is a big place. I don't really want my kale coming from Florida.... I believe I will have to figure out how to can and freeze this summer.

  2. Mmmmm maple icing sounds amazing right now. And if you can bake you can totally freeze! It seems like WA farms either have giant green houses, or they store hearty crops (onions, apples, potatoes) and sell them all winter long, or they just happen to live in a mild part of the state. Does Colorado have a mild weather section? Perhaps it gets too cold even for a green house. Anyway, I'd be curious to hear what the farmers have to say - go you for taking that initiative! Farmers markets for all!
